I called my colleague on Microsoft Teams and my intention was to record the call (video + audio). However, there was no option for recording the meeting. Why is the recording option not appearing on Teams?

You can click New Teams Meeting when creating a new meeting.
To avoid clicking “wrong” New Meeting button, we can customize ribbon to only show “New Teams Meeting” option. To do this, please go to File > Options > Customize Ribbon. Under Home(Calendar), select New and click Remove. Move Teams Meeting to the top.
I have finally found a solution:
Once I have joined the meeting on MS Teams, I can open the list of participants.
In there, I have the option of inviting additional participants, and next to the respective input box, there is a tiny button with a chain/link icon. Clicking it will copy just the "Join Teams Meeting" text with the appropriate link to the clipboard that I can then paste into the event body again.
So, there's no direct way from within Outlook (and I do have to consider the fact that the "Teams Meeting" button won't come back a bug), but at least there is some way to restore the Teams meeting invite.

It is not possible in Microsoft Teams calls. It is only possible in Microsoft Teams Meetings and the Record Meeting option should be available there.
You have to schedule a meeting in the Teams Calendar and join it. You should invite other people to the meeting, if you want (you can join the meeting just by yourself, or just two people, then record the meeting).
