I have some privacy concerns and would like to know how to disable screen sharing. I have tried turning of the WiFi but was then not able to use the internet.

in Lion this is possible, but don't remember seeing this anywhere in previous versions. When you start a screen sharing session it will ask you how you want to view the remote session.
The icon in the menu bar with binoculars inside of a screen is definitely the way to disconnect.

Go to System Preferences > Sharing and uncheck the box to the left of "Screen Sharing"
