I'd like to count words on a PDF file on OS X. The inspector doesn't contain the word count.

Open the document in Preview, select File > Duplicate, enter the file location and save a copy.
You can do a similar thing with File > Export.
Preview.app, the default OS X PDF viewer, sees underscores and allows you to search them fine.
You can search for words or phrases with underscores by using the underscore in the search box, as below:
