I just updated to Mountain Lion.
My documents were prepared in OpenOffice and contain many mathematical equations. After updating to Mountain Lion, the documents open in TextEdit instead of OpenOffice. This is an issue because TextEdit doesn't render the equations properly.
How can I re-associate OpenOffice documents with the OpenOffice apps instead of TextEdit?
This is the resume feature of OS X Lion.
You can use TinkerTool do disable resume on a per-app basis.
Besides this, TinkerTool gives you access to additional preference settings and allows to activate hidden features in the operating system.
I've also explained how to disable resume using the Terminal here.
You can ignore the gatekeeper restrictions on a per-app basis by right/control-clicking and selecting "Open". And because the check is done only on the first open, you can run it normally afterwards.

Go to one of your OpenOffice documents in the Finder and Get Info (⌘+I). In the "Open with" section, choose the appropriate app in the popdown (OpenOffice or LibreOffice), then click the Change All... button and hit Continue in the confirmation dialog.
