I want something simple – and I have found how to have preview pane on right (as opposed to bottom half of screen) OR remove individual message previews in the email list – but not both.
I just want a list of messages on the left (without preview of their text) – and to show the message on the right. This is simple in Thunderbird – but apparently impossible in Mac mail?
Can I do this?

Here's the setting you're looking for. It will always put your sig above quoted text.
Mail -> Preferences, Signatures.
Please try this. Click on Mail > Preferences > Viewing There will be a dropdown for list preview. Select a choice other than None. That will give summary information about the email message you have selected. Make sure you select an email. The actual email message should appear to the right of the summary. If it does not, you'll probably need to move your cursor as far to the right of the screen as you can go. Push down your mouse or track pad and move the cursor to the left. You should see the email that is selected.

In Yosemite (I'm on 10.10.1) I can do the following:
In my toggling of options, the message pane itself disappeared. However it was made available via a grab handle at the right edge of the screen. I now have a message list showing me no previews and a message pane to the right of that.
