I essentially have an updated version of this question: How do I prepare a new device in Configurator without updating the device iOS?
I have an iOS 9.0.2 device. I want to Prepare and Supervise it with Configurator 2, but do not want to update the device to iOS 9.1. With the old Configurator, this was possible (see answer to linked question).
Does anyone know if there is a similar way to do this with the new Configurator 2?
No, it is not possible to do this.
Your probably best of if you crop the photos yourself. Here are the pixel counts that work best for each screen size:
Automator let’s you easily crop images. See my screenshot below for explanation and just click the actions together.
You can automate resizing the photos with Automator, if you don’t demand to choose an extract of your photo.
Rember to use “crop images” with “scale before crop: Scale to Short Side”:
After finishing your workflow you could add a thousands images and let your Mac do the work. You will be prompted to select your images (see first action).
Just adapt the sizes for your corresponding device. You could also merge this into one workflow. Just duplicate the last three steps and change the suffix (_iphone5) in action “Add text”.

You could use the free app Ensoul Wallpapers from the Mac App Store. This let’s you choose an image extract.

I hope my answer helps you with your problem concerning your image size and how to resize them. Unfortunately, I do not see an option to set a background image in Apple Configurator (Version 3.5 (289)).

It seems that the way Apple wants you to do this is described here:
However, the specific use case described is for beta versions of iOS. In my case, I wanted to install an older (than the newest public) version of iOS. It looks like the UI is the same for doing either.
When I attempted to prepare my device this way, the process failed with error codes:
I am not clear whether this is because updating a device to less than the newest version is unsupported ... or there is some other problem. Therefore, I'm leaving this answer, but not accepting it as solved, should someone else have more to add.
