But I want it gone.
I could put it into a folder called "things I don't use".
But I'd rather just delete it.
If I ever buy a watch, I can just download the app.

You can simulate the Apple Watch using the latest version of Xcode on the Mac AppStore.
To run a watch app, you run the app on the iPhone Simulator with an Apple Watch target (the target is added in the Xcode project). The Watch Simulator then starts automatically.
You will need the source code for both the iPhone and watch apps.
You can delete the stocks app from your phone on iOS 10 - and that removes it from the watch. There isn't a way to have it on the phone but not on the watch.
There were currently no workarounds, jailbreaks or non-obvious ways hide and minimize the stocks app on the Apple Watch apps display on iOS 9 and associated watch OS. The rest of this answer applies if you cannot upgrade to iOS 10 and watchOS 3.
Consider making a long tail arrangement of apps placing the ones you don't want to see to the end of the line.

You can't remove several of the Apple-supplied apps (try removing the ever-useful Stocks app, for example).
The Apple Watch app is one of these.
Generally, people tend to move these to a folder that they use to hide the 'useless' apps, or move them to a different screen - just so you're not staring at them all the time.
Where I live, the Apple Watch is not even available yet, but still I got the app staring at me to remind me of this constantly. It got hidden pretty quickly!
