Does anybody know how to configure the status bar (bar size, icons and font size, and so on)?
I'd like to do it while keeping the screen resolution, of course.
I've browsed and searched both Ask Different and the web to little or no avail.

This is in all probability down to the KVM providing a fake monitor signal to OS X whilst the monitor is not "connected" to the OS X box; providing the KVM model would confirm this.
Generally, KVM fall into three monitor modes, usually these are priced low to high:
- No signal - where the non active connections receive no indication that a monitor is connected
- Fake - where the KVM provides a signal to the host that indicates a monitor is connected
- Pass through - where the KVM emulates or attempts to provide through another fashion, the signal of the monitor to all hosts
EDIT: I did test adding a monitor to a Mac Mini and the resolution it first went in on was low, even after setting up the resolution, disconnecting the monitor (power off at the wall and back on) only sometimes caused the resolution to default back to a very basic one.
Late to answer but still for those landing here looking for a Ethernet connectivity status icon in menu bar, check this macOS app Ethernet Status - The Missing LAN Status Bar Icon. It shows ethernet interface, IP Address and if interface is active via changing menu bar icon. More here
It does differentiate between WIFI and Wired Ethernet and shows the status for wired ethernet correctly. It also lists the available interfaces and some useful device information.

For the most part the menu bar has no configuration options in respect to font, size, etc.
You can however manage the icons in the menu bar by holding command while clicking & dragging them. This allows you to re-arrange the icons or drag them off the menubar to hide them.
As others have suggested, I'd encourage you to submit feedback to Apple regarding any customization changes you'd like to see in future versions of the OS.
