To highlight text in pdf files, I select the text and hit the highlight button:
The default was yellow highlight. Somehow, it got changed to a red underline. How can I change this back to yellow highlight again?

The Preview help mentions:
Use highlight mode: Click the Highlight button (so it turns blue), click the down arrow next to the Highlight button, then choose a highlight color, underline, or strikethrough. Now, whenever you select some text, the highlighting style you chose is automatically applied to the text.
So de-select any text in an open PDF. Click the Highlight button - nothing should be highlighted additionally in your PDF now - click the down arrow and choose a color or strikethrough.
You can also determine several different highlight colors in a single PDF with this method (here yellow, pink and underline):
This seems to be a bug in Preview. There's a related thread about this topic in which many people say they are experiencing the same problem. I too have just tested it out and see the same results.
There are 2 workarounds I can think of. The 1st is to select all the annotations and set their color manually:
Open the annotations toolbar.
Press the right-most button which will show you a list of all the annotations.
Select all the annotations.
Choose a new color from the annotations toolbar.
The 2nd workaround is to use the Python script from the same thread previously mentioned.
PDFs are just a wrapper for various kinds of content. Depending on how the PDF was created the text might be selectable. A lot of them have the text stored as graphics and in that case you wont be able to select/copy/highlight it. I suspect PDFs also allows the "protection" of content so that viewers cannot select and copy bits of text.
Where did you get the PDFs if you can track the source you can change how they are created. If it was prom a scan it will normally be a picture. Utilities like PDFPen etc. allows OCS of Scans. If you do that the text will become selectable/highlightable.
