Build cask formula from source

Is it possible to build cask formula from source instead of installing the corresponding pre-built app-file?

No.

Homebrew-cask is for binary distribution.
Downloading binary and place appropriately is all what Homebrew-cask does.

If you look in a cask (package installation script), you'll notice there's no url for source file (.tar.gz) but only for binary file (.dmg, .zip, etc.).

ln -s /Users/myusername/mygitrepository/my-formula.rb /usr/local/Library/Formula/
brew install my-formula

Both brew doctor and brew update shouldn't mind, at least not until a my-formula formula is added into the official brew repository!

Homebrew Cask and Security

Yes, and also trust that having the sources in the open and others using it, you don't need to be the first person to catch a bad act. The traceability of who checks in what hopefully is a deterrent to casual maliciousness.

You of course are more secure to not automate installs of unsigned software from the internet.
