You can simulate the Apple Watch using the latest version of Xcode on the Mac AppStore.
To run a watch app, you run the app on the iPhone Simulator with an Apple Watch target (the target is added in the Xcode project). The Watch Simulator then starts automatically.
You will need the source code for both the iPhone and watch apps.
I think Apple's included Workout app can record activity and heart-rate data without the iPhone, but the Nike+ Running app can't (as of the 17th of November 2015).
Here's the info page from the iPhone Nike+ Running app (Nike+ Running > Settings > Apple Watch)..
Nike state that you need to have your iPhone on you.

As of watchOS 4 (and the newest watchOS 5 beta), you can't really do that, Apple didn't make it possible.
