Ubuntu – USB tries to install onto itself (dual-boot with Win10)

I'm just trying to dual-boot my XPS and have followed the instructions by Dell here to install Ubuntu 16.04.3 LTS.

I've gotten as far as booting into Ubuntu on the USB drive but when I go to install it's saying there's not enough space on the drive – because it's only looking at the USB…

I've created the blank partition via Windows 10 (as per the instructions) but aren't having any luck getting Ubuntu to see it. I've configured all the BIOS settings Dell goes over, just cannot crack it. I also did a sudo fdisk -l and only the drive and a couple other 512 byte drives come up.

Any help would be muchly appreciated! I've read a bit about the drive type, it's set to RAID – would that have something to do with it?

Disable the hibernation mode and Fast Boot in Windows.
Open command prompt as administrator and execute :

powercfg /h off

Open the legacy version of the Windows Control Panel (not the modern version).
Select Energy Settings, enable show hidden settings and uncheck Fast Boot.
After having done this - shutdown the computer completely - do NOT reboot.
Boot into the BIOS and select Ubuntu as the default operating system to boot.

Update :

In case there is no Ubuntu entry to be found in the BIOS / UEFI settings,
re-install the GRUB boot loader to your Ubuntu installation in EFI mode.
Boot from the Ubuntu installation media - open a terminal and execute:

sudo mount /dev/sdXXX /mnt
sudo mount /dev/sdXX /mnt/boot/efi
for i in /dev /dev/pts /proc /sys /run; do sudo mount -B $i /mnt$i; done
sudo chroot /mnt
grub-install /dev/sdX
update-grub

Note:

sdX = disk | sdXX = efi partition | sdXXX = system partition

To identify the partition numbers use GParted - it is included in the Ubuntu installation media.
Boot into BIOS and select Ubuntu in UEFI settings to be the default operating system to boot.

Y'know, Windoze is SO slow at booting that, instead of actually killing the system and shutting down the computer, it enters an hibernation mode. This is the so-called "fast boot". When Windows is hibernating, basically nothing can be done to its partition, and that's probably the reason why the installation options are greyed out. You should disable Windows' fast boot first.
