I am trying to setup one of my servers with Ubuntu 18.04 server edition. When trying to do disk partitioning it does not allow me to choose Software RAID configuration (That open does not exist at all). How can I solve this.
Note: I tried with Ubuntu 16.04 and it works fine
Well, I was able to proceed by deviating from the official install docs slightly.
Rather than manually configuring the free space on the two drives, I selected "automatically partition the free space" on each drive.
Note that this caused automatic creation of a 32 GB (equal to RAM size) swap partition, and one large ext4 partition. I changed the ext4 partition to RAID, then I was able to mark it bootable at last!
Note the little "B" next to the RAID partition on the first sda drive.
When asked: Active MDADM containers (Intel/DDF RAID), choose "yes"
It will then ask: Activate Serial ATA RAID device, at this point wait and switch to a shell by pressing "alt+f2"
Press Enter to activate the console
Then run the command "mdadm --stop /dev/md127"
Next activate the intel dmraid by running the command "dmraid -ay"
Press "alt+f1" to go back to the installer.
Now you can answer the Activate Serial ATA RAID device with "No".
It should now pick up your Intel RAID.

You're downloading the wrong version. Ubuntu 18.04 has a "live server" version which has a faster/easier, but less configurable installer.
You want to download the alternative installer instead: http://cdimage.ubuntu.com/ubuntu/releases/bionic/release/
