When copying or moving files on Ubuntu 17.10, I can't see any progress bar. I checked as well all opened windows but I can't see any progress window.
Please any ideas or suggestions would greatly be appreciated.

I would suppose you are using Nautilus as your file manager and if so there are long-standing bugs about this. Too numinous to mention effecting Mint, Fedora, Red Hat and all the like. Ubuntu is not without this same issue.
Some suggest turning off thumbnail view helps. Others put their hopes in the "newest kernel" but this still exists.
The problem = Starts off fast, then goes slower This is because when mounted with async it will write to the cache, when the cache is full you see the "Real" write speed.
The work around seems to be sudo cp /filetobecopied /dev/nameofdevice

Nemo file manager is a fork of Files (Nautilus) in response to these changes and has an option to start split screen accessible with F3 or under View -> Extra Pane

In recent versions of Files (aka Nautilus) separate copy/move status window is no longer available. Instead, you should see a circular symbol (animated pie-chart to show progress) at the top-right of Files window.
Click on it to see details.
