Is the a way of changing the font size of the tabs in Chromium?

Unfortunately, no. The font size is hardcoded in the Chromium source code. This issue has been reported here, you can "star" it to be notified of any changes.
Sadly, no. The font sizes are hard-coded into Chromium. Your only hope is to try to get this added as a feature to Chromium, but I find this very unlikely.
As a Mint user ( using the same Ubuntu packages ) , I've found that everything was fine in Chromium up until 41.0.2272.76-0ubuntu0.14.04.1.1076. Since then, the fonts in tabs, menus and bookmarks have grown by about 2pt as per the screenshots.
Chrome itself is still displaying correctly with the smaller font size. I have google-chrome-stable 41.0.2272.89-1 installed.
