I know how to set default web, mail, calendar, music, video and photo-viewing software (by opening System Settings) but I'd like to be able to set my default PDF viewer.

I go to the start menu, then:
System Settings->Default Applications->Web Browser
and then I tell it to open http/https in:
google-chrome
Now links in choqok (or any other kde application) are opened in chrome,
also, if I do alt+f2 and type "man:file" for instance, the man page opens in chrome.
I also modified the default email client so that emails are launched using gmail using the following command:
google-chrome "https://mail.google.com/mail/?view=cm&fs=1&tf=1&to="%t
I believe the font settings are all over the place in Xubuntu.
For the theme default font, > Applications > Settings > Settings Manager > Appearance > Fonts tab > Default Font -
For the window manager font(window title bar) > Applications > Settings > Settings Manager > Window Manager > Style > Title font -
For the Xfce Terminal, Open up the terminal,located > Applications > Accessories > Terminal Emulator, go to > Edit > Preferences > Appearance > Font -

Right click on any pdf file and choose Properties. Under the 'open with' tab, you will find the applications to open PDF files. Choose your application of choice and then press the 'set as default' button in the right bottom corner.
