I know how to change gnome's terminal font using the gui 
But I would like to do the same using the terminal (automated way). How can I do that ?

Bash terminal:
Menu, Edit => Profile Preferences => General tab; uncheck Use the system fixed width font, and select the font you want.
For general xterm terminal, you need to create a file ~/.Xresources, and add settings to it, such as xterm*font: Sublime\ Text\ 2-12 for 12 point (this is a guess, I don't know if it's totally correct).
Ctrl++ and Ctrl+- are working fine for me. Maybe you have different shortcuts configured.
To change the keyboard shortcuts, go to Edit -> Keyboard Shortcuts... in the gnome-terminal menu, and look for Zoom In and Zoom Out:
