In rearranging the panel, I removed the Network Manager Applet. I tried to add it back, but it doesn't show up in the list (Add To Panel). I can start it up and see it as a running process (nm-applet), and I'm still connected to the internets, but I don't know how to get the panel icon back.

If you see "device not managed" then probably your NIC is indeed not managed from network-manager.
Please check the following file:
/etc/NetworkManager/nm-system-settings.conf
What does the following section say ?:
[ifupdown]
managed=?
if it's set to "false", switch it to "true", save the file and run a:
"sudo service network-manager restart"
You'll need to start the network manager applet. It's started by default, although it sounds like you've done some customisation. Here's a screenshot of my entry :
This is available through system/preferences/startup applications.

You have to add the Notification Area applet to the panel. The network manager will show up there.
