I find that the View menu has disappeared in the newest version of Evince. Is there still a way to hide the toolbar? I would like to do this in order to share a presentation using a Google Hangout-on-Air. So far, the toolbar shows up at the top. Thanks.

In addition to the gsettings option introduced in 15.04 (below), this same capability has been added to the Settings - Appearances window (click the gear icon top-right of the screen)

15.04 now has the ability to toggle the global menu as well as the local integrated menus (Via System Settings - Appearance - Behaviour tab) to be permanently on or off.
If you are running a fully up-to-date version of 14.04, this same ability has been backported.
To switch on permanently:
gsettings set com.canonical.Unity always-show-menus true
To switch off i.e. to autohide:
gsettings set com.canonical.Unity always-show-menus false

The toolbar in evince is apparently buggy, according to bug reports, and it is not possible to hide it, ever, as it remembers per-file settings, which override/ignore the toolbar visibility setting adjusted via e.g. dconf-editor.
It is a shame that evince, which works so well, has this glitch in the UI. The visibility toolbar should be adjusted from a "View" menu. Please bring that view menu back.
