I have LibreOffice Version: 5.1.2.2, Build ID: 1:5.1.2-0ubuntu1 running on Lubuntu 16.04 LTS. It defaults to gtk3, but I want to know if I can switch it to gtk2 instead as hinted by comment #7 in https://bugs.launchpad.net/df-libreoffice/+bug/1527053. Is that possible? man libreoffice makes no mention of such a possibility.

There’s a line in gtkrc which includes a workaround for a problem of ComboBox menus. The workaround replaces the colors of ComboBox entries with text color which is dark:
widget "*.gtk-combobox-popup-menu.*" style "menuitem_text_is_fg_color_workaround"
To fix the problem, a # mark should be inserted at the beginning of the line in order to be ignored and make menu entries colored in dark_fg_color which is light:
#widget "*.gtk-combobox-popup-menu.*" style "menuitem_text_is_fg_color_workaround"

It looks to me like you're using different values for tooltip_bg_color in GTK2 and GTK3. In /usr/share/themes/Ambiance/gtk-2.0/gtkrc you have #ffffaf, while in /usr/share/themes/Ambiance/gtk-3.0/settings.ini and /usr/share/themes/Ambiance/gtk-3.0/gtk-main.css you have #f5f5c5.
If you want the lighter yellow (like your Firefox screenshot) in GTK3 apps, use #ffffaf in /usr/share/themes/Ambiance/gtk-3.0/settings.ini and /usr/share/themes/Ambiance/gtk-3.0/gtk-main.css.

Start libreoffice with the environment variable
SAL_USE_VCLPLUGINset togtk:SAL_USE_VCLPLUGIN=gtk libreofficeDepending on how you set up environment variables at boot, you can include the setting in the appropriate places.
Works for me under Arch Linux.
Note: Also supported:
