Between Empathy contacts, Ubuntu desktops can be shared, how can it be done outside of Empathy? What applications and packages are involved?
Note, I actually do not have any experience in sharing desktops (due to lack of Ubuntu-using contacts), but I need to be able to do so in my role of converting a school's system to Ubuntu as a member of a fledgling LoCo.

I specifically require to set up a server that can access any computer on the network on request – i.e. if the server requests to view any computer, the computer should oblige without user interaction.

Personally I like teamviewer alot. Both of you get to insert a number and the teamviewer server sets you both up. Screenshot:
I use this alot since 99 out of 100 people I need to connect with do not understand even the basics of using computers. Teamviewer also has a Linux DEB (click to download) and is free for personal usage. You can set it up on one of your own systems: 1 system acts as A server, the other(s) act as (a) client(s).
