Is there an obvious way of shifting numbers in the gcalc-tool using an operator, such as << or >>
Am I missing an obvious shortcut?
Say I want to simply perform (1<<20), how can I do that without the need to shift by 15 and then by 5 using the drop-down buttons?
Alternatively, is there a good hex/binary calculator that you would suggest specifically oriented at hex/binary operations?

You just need to change the preference. All functions are there. This is a screenshot from the default calculator
Go to Menu → Programming to enable this. There are other powerful functions too as @Takkat said in a comment.
Alternatively, You can try using speedcrunch. Do sudo apt-get install speedcrunch in a terminal
The Calculator has various modes. What you are looking for is the Programming mode, which lets you display numbers in various bases. To use it, select Calculator › Programming from the menu.
As you asked for the scientific mode, I must add that functions commonly used in scientific calculations are available using Calculator › Advanced.

From what I have seen Gnome Calculator does not have keyboard shortcuts to those functions. Either way Qalculate lets you do exactly that.
To install either search it in Software Center or using terminal:
