Since it doesn't sound like you're providing any credentials from the Pi, perhaps ensure you are allowing Anonymous access to the Windows shares.
Keep in mind "Everyone" is not the same as Anonymous. But you can make Windows behave that way...
To enable anonymous access on a local workstation or server computer
Open Local Security Settings. (Start->
secpol.msc).In the console tree, double-click Local Policies, and then click Security Options.
In the details pane, right-click Network access: Let Everyone permissions apply to anonymous users, and then click Properties.
On the Local Security Settings tab, click Enabled, and then click OK.

Note: I don't think Secpol.msc exists on Home versions of Widows.
For this purpose, go to File Server Manager like as picture one. In this section go to Run and type
fsmgmt.msc
and press enter. As you can see in picture, all of shared folders and number of clients in Shares part are visible. Also you can see the names of those who are connected to your computer in Sessions part and information about Open Files part.

If on real time, Resource Monitor would help. On Disk tab you can see which file are being read, and on Network tab you can see who are receiving data from you. But it's basic.
If you want to be more thorough, and getting the statistic, in the properties of your shared folder, select Security tab, Advanced, on Auditing tab, add the users you want to track on. Now open
gpedit.msc, on Local Computer Policy → Computer Configuration → Windows Settings → Security Settings → Local Policies → Audit Policy → Audit System Events, check both Success and Failure.The log will be in Security node of Event Viewer.
