I believe print styles can be used to change how your emails are printed

If that doesn't work for you, follow the instructions here. It gives you a few methods for doing so. The "Remove headers from the message form" is probably the most integrated method, but will change how you see emails when you jsut view them.
Open the .msg file (Double clicking
it should open it in Outlook).
If you're using Outlook 2007, click on
the small arrow at the bottom of the
Options section of the ribbon. If
its Outlook 2003 or below, click
View->Options from the menu bar.
This should bring up the Message
Options window.
The full message
headers should be present in the
text box labeled "Internet headers"
in this window.

This is how to view the full header information in outlook 2003/2007.
You can scroll through and read it or you can continue to your favorite text editor and paste it into that for easier reading.
