I am trying to figure out how to delete my saved credentials when I mount a share to my Windows server. I've tried deleting any mentions of the particular server from within Keychain, but I still log in automatically when doing a new mount.

I figured this out. I just cleared out everything from Keychain Access and .ssh/known_hosts. I think the known_hosts was what fixed it. Previously when I SSH'd in from the command line I got a warning about "mismatched keys" or something.
These are called Network Passwords and don't actually belong to Finder. You'll probably find them in your "login" keychain if you have a closer look (you can also search for the server's name).
Never mind that this is a VNC password, it stores them for AFP and SMB as well.

From within Keychain Access go to the menu and select "Ticket Viewer". I was able to delete my kerberos ticket there. I also read that klist and destroy would work from the command line, but klist does not show any tickets on Mavericks
