I've tried the following to disable this behaviour:
System Preferences -> CDs & DVDs -> When you insert a video DVD: set to Ignore (actually moved all of them to Ignore)Neither of these made a difference; insert the disc and the DVD player still starts playing it. Any other options? I just need to hide DVD player from the Desktop and stop autoplay.

[Remove] the IODVDStorageFamily extension (
IODVDStorageFamily.kextbundle) from/System/Library/Extensions. I simply created a new folder called DisabledExtensions and dropped it there. There's also an IOCDStorageFamily extension, presumably if you're using a plain-old CD-ROM drive, you'd want to nuke that one. After moving the extension, I rebooted and confirmed that the drive no longer showed up (nor did it cause hangs) when opening System Profiler or other applications that want to interact with the optical drive.
Make sure that CD,DVDs checked in Finer preferences

If you're still on Mojave or earlier, try RCDefaultApp which has a few more options you can set to ignore. It won't run on anything newer than Mojave & its modern replacement SwiftDefaultApp has no options for optical drives.
