I Upgraded Windows 8.1 to a recent version using a retail DVD.
I need to uninstall an update that came with this new version, however there is no option to uninstall it.
How can I resolve this?

It can replace the start menu in Windows and it has many customization options. It looks good and the original Windows start icon can be used.
When installing, you have an option to only install the start menu. The package includes a classic file browser which you may not want.

Classic Shell can replace the start menu and activate with the Windows key. Those options are in the settings.
To access the Metro Windows 8 start menu, you can hold shift and click the start menu. You can configure an "Apps" menu item that will allow you to open any Windows Store App without using Metro.
Here are a few examples, there are many possible configurations:
Sometime you can't (officially) uninstall some update, because they are marked as permanent in its manifest file (metadata)

Microsoft does this for all servicing stack updates. You could remove this permanence entry, but I had issues in the past after removing older servicing stack updates. So don't try this.
It can also happen when you ran Dism.exe /online /Cleanup-Image /StartComponentCleanup /ResetBase. This removes all older files and make the file from the current update as base for all newer updates. Here you can also not uninstall it.

This is impossible. The DVD was optimized with the command
and /ResetBase removes the older files, so that you can't uninstall the updates.
