I have a Lenovo G50-80 laptop with an on-board Intel HG Graphics 5500 and an external 2048MB ATI AMD Radeon R5 M330, running Windows 10 Pro.
Windows chooses its self when to use one GPU or another. Normally it uses the on-board GPU and it switches to the secondary GPU when I start a game that requires it (I assume it's when some game requires DirectX graphics). Is there a way I can configure Windows to always use the secondary graphics card and ignore the on-board card?
Right-click on the Desktop and choose the option for "Configure switchable graphics". In the dialog that appears, you will see an option for "Automatically select power-saving GPU when on battery". This option controls whether the graphics switch automatically. If you uncheck the box, then the GPU should only switch when you manually change it using the specific buttons.
(Note, this is the procedure on my HP laptop with ATI switchable graphics. I assume it is the same or similar for your Acer, as the drivers should be the same, but I can't guarantee that it'll work.)
Remote Desktop will not allow this. In Server 2008 R2 SP1, there is a new feature called RemoteFX which can allow some rendering through a remote desktop connection, but the server is required for this feature to work. I would recommend that you keep the server's monitor where you can see it well and use 'Mouse without Borders' to access the server machine from the same keyboard and mouse that you use on your main workstation. You can even drag and drop files between computers. Best of all, it's free!
