Whenever I go to my router's configuration > NAT > Virtual Servers, I see many entries titled "Skype UDP at 10.0.0.X:< port> (< port>)". I believe that these are being made by the Skype client on different hosts, to allow some sort of functionality. How does Skype manage to get access to port-forwarding? Is there any way to disable this?

Generally speaking only the person that is RECEIVING a connection should need a port forward. But it's really best if you port forward on both ends.
A good place to start is the portforward.com guides for Skype. You can get to them here: portforward.com
They should have a writeup specifically for your router and Skype. If not, just let them know and they'll add it.
BTW, UPNP is an option as well, but lots of computers have it disabled and lots of routers do not support it. If you want to be certain then forward the ports.
This is how I solved mine.
Go to your favorite browser and enter your Huawei b310s-927 IP address eg. 192.168.8.1 or 192.168.0.1 depending on your routers IP.
It will bring up a page for downloading there mobile app, skip it by clicking the link below that says "Web Page".
On next page, click settings and then enter your admin login and password which can be found below the router or user manual.
The default is username:admin password:admin
Next is on the quick setup navigation, click security and then click virtual server.

On virtual server, enter your configuration. If you still experience fault, click firewall switch and disable it. Although mine works with firewall on.
That's all you need to do.

How does Skype manage to get access to port-forwarding?
One of the ways Skype gets arounhd firewalls is by using Universal Plug and Play.
You can disable UPnP in your router to prevent this.
