Usually I use Microsoft Word 2010 to write English documents
Now I'm editing a document of another language, and want to change the spelling check language of this document
This change should not affect other documents (means does not saved by default) so I can work with English documents in the future

This was the cause of my problem where auto-correct was not working.
I've never understood why sections of my docs keep appearing in different languages. It's not something I ever change.
In Office 2000 I could see the language in the status bar where I would look automatically whenever strange things started to happen. Unfortunately, even though I have ticked Language when I right-click on the status bar, it doesn't display the language.
It wasn't obvious to me that Language would be in the Review section and it is tedious to have to use Review > Language.
Try this:
Select all the text in the document (keyboard shortcut should be 
+A)
Go to Tools / Language and select English (UK) (instead of English (US) as shown below):
Remember to click the Default button (agree to the prompt)
Note: I've found that even after doing this (on Word for Windows at least), it still considers certain US spellings as acceptable alternates for UK ones and refuses to mark them as incorrect.

In Word 2010:
In Word 2007, Review tab > Proofing group > Set Language will accomplish the same thing.
