I have a SATA hard drive that says it supports hot-plugging. Does that mean I can actually connect it to power and a SATA plug while my computer is running? Would be handy, but seems kind of scary…

If you wish to keep the functionality of AHCI (SATA) do not set it to IDE in the bios, instead use driver packs to slipstream "Mass storage" drivers into the XP CD.
Driver packs tutorial, read carefully.

You can install other driver packs besides the "Mass Storage", but this will bloat the size of the XP install to DVD size, The only driver packs I suggest to slipstream are
Mass Storage Chipset CPU
This will keep it a size to fit on a CD. If you want all the drivers slipstreamed it will require a DVD burner.
I don't change any of the default settings when using the software, just pick the driver packs you want to slipstream and create the ISO image.

If you can set it in you BIOS and it boots without the SATA drives, probably for IDE / PATA hard drive has No Jumper present (which means it's on Slave Mode) or it's set to a Jumper which is on Master without Slave present / Master with non ATA compatible Slave.
Change the IDE drive jumper to Single or Master. Attaching a screenshot below:

Some links I promised with people having similar problems, but most say they can't boot through the SATA when IDE is connected. Your problem is exactly the opposite.
I simply think the BIOS has some issues, and sadly Abit has stopped making motherboards and has also stopped giving updates. You might need to find a decent workaround!

As long as its not the OS drive you should be fine, since SATA is "hotswappable" though i have experienced corruptions of the FS once or twice. So i try to avoid it.
