I had a bunch of songs on iTunes that didn't have artist names, so consequently, I didn't have artist names on my iPod touch. I added artist names to all the songs I have on iTunes and now the artist names are not even showing up on my iPod. It just says "Artist Unknown" I really have no idea what to do. Can someone help me?

First, remove all songs from the device (from within iTunes) and then try re-adding them. If that fails to have any effect, remove all songs, unplug the iPod, re-plug, and add a few back. (Don't bother checking for songs in Explorer; that's not going to help.)
If that doesn't work, back up any data that has made it to your iPod and restore the firmware in iTunes. Then try to add a single song and see if that works. (Add a playlist with one song, then try dragging one over manually, if you prefer that setting.)
Comment on what worked or didn't: if nothing works, I'll come up with more things to try.
As of iTunes 10 (or possibly 9), the main library window has the option to do exactly what you want. You need to have it in Album List mode (View menu -> as Album list; or the 2nd option in the view controller:
Then select the "Album by ..." pulldown and select Album by Artist/Year:
You should be all set and have a nice organized list of albums sorted by artist and year.

I faced the same issue after upgrading my iPod touch to iOS 5.1.1. I ended up restoring it to factory settings, and setting to auto-sync with iTunes (I ordinarily prefer to sync it manually!). I also had to change not only all "artist" names but also "album artist" names, as the new software appears to list the music according to album artists.
