I just discovered that two downward-facing triangles appear whenever I'm working with a text object in keynote; those serve to define the initial and final tabs. But I noticed that clicking on the ruler between these triangles creates additional shapes (left and right-facing triangles, a rhombus/diamond, and a circle). I've tried moving them around, but I haven't seen any change in the text. Maybe I don't know how to insert proper tabs while I'm typing. Any ideas?
At this point, there is no default functionality on the iPad for arrow keys. (I suppose the idea is to tap the text to position the arrow). There is a chance that there is a 3rd-party keyboard for iPad that would include arrow keys.
Those arrow keys, from what I have seen, are unique to the iPhone 6 (and Plus) while in landscape mode.
Because of the way that the iPad can be typed on (two-handed vs. two-thumbed on the iPhone), there is a chance that arrow keys will never be brought to the iPad's default keyboard.
One way of having equations flow with the text is to use the equation editor inside Keynote to create equations.
You can use Insert > Equation menu at the top of Keynote or press Alt ⌥+Command ⌘+E to activate the equation edtior.
The equation editor in Keynote supports both LaTeX and MathML. See this Apple Support page for more details.

The outer two are Margin guides [the edge of the printing area], the inner ones are Tab-stops; Markers that text & numbers will line up to if you separate them by using the Tab key instead of just some spaces.
The orange lines are mine, for illustration.
'Right tab' in the picture unfortunately has an accidental space after it, which stops it lining up with the orange line properly - my bad - but it illustrates that the space itself is included in the tab-stop.
You can see & edit a Tab function by right clicking a Tab marker...
BTW, if there's not enough room for the tabs, compared to the typed text, they simply don't [can't] work.
One last note - Tabs are set for that line only unless specified globally before you start typing, or if you Select All.
