Somehow, I don't know how or when, I deleted preview.app. Everything else is fine. What's the easiest way to get it back?

Try Skim. It has a preference option to check for file changes.
Just open the photo in Preview, press Command-I (⌘+I) to bring up the Inspector. Click the circled i (ⓘ) tab, and then the Exif tab. At the bottom of the list you'll find Image Number.
This is your camera's shutter count.

Download an OS X installer from App Store, and use Pacifist to copy the application bundle.
Wait until 10.9 is released.
