In Finder (Sierra) if you select "All Tags…" in the Finder sidebar, it presents a list of tags. These tags, if they are above a certain length are truncated. Is there a way to prevent this from happening?

You can't get there from the tag view accessed from the sidebar, but if you navigate to the directory you want to search, and type the tag you're looking for, it will find files in that directory.
Go to Finder → Preferences → Tags. You can rename/delete tags by right-clicking and modify the coloured tags with the control at the bottom.
