Say I want to quickly find all emails by one person.

In some email editors you can type "from: John" and it would understand that you are only interested in messages that John sent.

Is this possible with Outlook in OS X? What about Mail?

Outlook 2011 for Mac can do that: just skip the space. So, from:John.

It shows your smart search options as you type. Click one of these (or just type them with the colon), and it'll search only that type of thing:

Or, you can click in the quick search box, then click the "From" button in the "search" ribbon section that appears...

...then type "John" in the different box that appears.

Less typing, but one extra click.

Setting Default mail Client tells your system to use that one when requesting email from other applications. (outside of Email).

While in Email (Outlook or Mail) they will do as told.

In your case using MS Office Word, Excel, PowerPoint with email link in one of the documents, will by default use the chosen default mail client.

There is a simple work around. Since you are probably not using heavy duty MS Office applications to handle your Mail.app but do so with Outlook, I would make the Outlook the default mail application. Now you can use Mail as email and Outlook will be the default mail client for your work.

Utilizing Is Equal To requires an exact match against whatever you trying to match. Depending on how Mail is looking at a recipient's address, it may include brackets around it and/or include the person's name, in addition to the actual email address. These strings wouldn't match just the email address, obviously. Using Contains instead allows it to match the string you know should be there - the email address - no matter what Mail is actually matching against.
