I'm trying to record a screen capture with Quicktime, but whenever I zoom in, it doesn't translate to the video taken. I've seen videos with screen zooming in them, so I know it can be done. I repeat, I can see the zooming while recording, but it doesn't show up in the video later on.

Screen Zoom is a system-wide feature. In Lion, this is part of Universal Access.
The short version is:
Visit System Preferences->Universal Access->Seeing
And set "Zoom" to on.
You'll then be able to scroll using the control key and the scroll gesture of your input device.

You can actually record audio with a Screen Recording in Quicktime, you just need to set the proper option. Just open a new screen recording (⌃⌘N), then click the white triangle:
You'll get a popup menu with options to choose which sound input you want to record from:
Select the appropriate sound device, then start the recoding, and you'll be able to narrate as you record your screen.

Snapz Pro from Ambrosia is able to record the screen with zooming in and out. It costs $69 and can be found at: http://www.ambrosiasw.com/utilities/snapzprox/.
I tested and found this works with the most recent version 2.3.3.
