I am wondering why the manual pages in the Terminal app look like shite on my Mac running macOS Sierra 10.12.5?
If I run the command man grep for instance I get a crappy layout of text in the terminal window (black terminal). But if I right-click grep and choose open man page then I get the properly formatted version (yellow terminal) of the manual.
How can I resolve this?
The Missing Manual series is pretty comprehensive for the whole OS, though they don't cover shell commands deeply.

Whenever I kill Chrome via Force Quit under the Apple symbol on the left corner, it does reopen the chrome pages for me. Although you have to ensure to select the option under Chrome preferences:

Also checkout the list of Extensions to ensure none of those are causing Chrome to fail. Would be better to run chrome in Incognito mode for a while to troubleshoot this as most extensions should not be running in Incognito mode unless that option is explicitly enabled.
Finally, my personal learning for Chrome browser is that I am better off not keeping them open across days of personal session on laptops. It's better to use fewer tabs and close them as you are done with it, then trying to keep those tabs open for longer. I found the laptop is more responsive and my work happens faster that way rather than trying to fight with an open tab that's been in process for days on end and is starting to hog more RAM.

Right-clicking a command and choosing open man page in the Terminal window uses the "Man Page" profile in the new Terminal window. In your current white-on-black profile you've set bolded text to black instead of white or another color. Therefore the bold text isn't visible on the black background.
Choosing yellow instead of black as color for bolded text in the Man Page theme would result in a similar crappy display of the grep man page:
