I have a playlist folder called Stars. Inside it I have 5 smart playlists. one playlist for each star rating. 1 star, 2 stars…etc. is there a way for itunes to automatically write a '1' in the grouping tag when i rate a track with one star? thanks!

If you select a smart playlist, then choose File > Library > Export Playlist... and choose the XML file format, you can then use the corresponding Import Playlist... command from another iTunes library to import the smart playlist definition.
Unfortunately, iTunes only lets you select one playlist at a time, so there's no way to select multiple playlists and export them at the same time. You can do the "Export Library..." which does everything, but then you have all sorts of extra stuff you don't want.
If you're comfortable hacking around a bit though, you could export the whole library, then use PlistEdit Pro to edit the file and remove all the playlist and track dictionaries that you don't want, leaving just your smart playlists. Then you'd have all the playlist definitions in a single file that you can import into another iTunes library.
One star is certainly rated higher than none, but in practice, marking one star for the songs you really don't want to shuffle is a great practice.
I have several "utility" playlists to weed out songs and having one star is one of the exclusionary criteria for the source of iTunes DJ
my zPartyTracks smart playlist criteria are all of:
- Album Rating - is not - one star
- Rating - is not - one star
- Genre - is not - holiday
- Time - is less than - 12 minutes
As I've got many songs rated above 1 star, those never seem to show up in playlists that prefer higher rated songs, and the one star songs are relegated to being specifically included even though they did get one star.

Short answer: No.
Long answer, still no, but there are workaround. You cannot have the label added in the grouping tag as soon as you rate the track. However, you can write a small Apple-Script that you would setup to run everyday (or every hour, or anything else) that would scan your iTunes library and write the tag to the tracks, depending on their rating.
