I have a Canon Lide 110 (scanner) and an Epson L120 (printer) which I want to combine to achieve the feature set of an off the shelf all-in-one printer-scanner. Is there a software that I can use to do this on my MacBook Pro?

I also have a HP ScanJet 4890 and it has never worked natively with neither Snow Leopard nor Lion. The fixed communication to the HP software seems to be by design. As @kremalicious says, that also makes it not work with built-in tools as Image Capture or Scanner Sharing.
While I can live with that, it's quite annoying to wait more than a few months for new working HP drivers and software after a new OS X version is released.
Use Image Capture (Applications>Image Capture). Select the printer from the sidebar:

You can import an image from a scanner and print it in Preview, though this is not completely scriptable, but will only take a few clicks.
PDF Pen can import from a Scanner and Print the results, and is fully AppleScriptable.
