I download an excel file which contains chinese characters, but the excel on my macbookpro/osx/snow leopard is not able to show these chinese characters.
However if I copy a chinese character from somewhere and paste it into a cell, it is able to show the chinese character.
What might be going wrong?
Snow Leopard's CharacterPalette.app still works on 10.7:
Those "iOS symbols" shown in the screenshot above are glyph variants that are specific to Apple Symbols. For example the turned arrow icon is a variant of Ꮿ. There doesn't seem to be any way to show them in 10.7's Character Viewer.
You could also use Font Book to save a PDF file for all characters in a font:
The special characters included in the popovers are defined in files like /System/Library/Input Methods/PressAndHold.app/Contents/Resources/Keyboard-en_US.plist, not in .keylayout files. (The popovers are also used with languages that have their own input methods like Vietnamese.)
I don't know how to add a property list like that for a custom layout though. I also tried copying the U.S..keylayout that comes with Ukelele to ~/Libary/Keyboard Layouts/ (without changing the name or id), but the popovers didn't work with it.

We recently had a similar issue with all Asian fonts in Excel for OSX (Chinese, Japanese, and Korean). The solution that worked for us was to change the font to "Arial Unicode MS". You can do it for just the cells in question or the entire sheet.
