This all happens inside the "Sharing" pane of "System Preferences":
- Select "Internet Sharing" from the list
- Select "Ethernet" from the popup menu
- Click the checkbox next to "Wi-Fi"
- If you wish to secure the wireless network a password, click the "Wi-Fi Options..." button
- When you've got it all set up how you like, click the checkbox next to "Internet Sharing"
- There is no step 6
I'm not specifically familiar with ARD, but in general Apple assumes one IP = one computer. You'll be less likely to have these kinds of compatibility and interoperability issues if you give each VM its own IP address by using "bridged" networking on ESXi instead of NAT.

Yes, but with caveats.
MacOS X has an "internet sharing" mode in the "Sharing" control panel, but you have to use different network interfaces for the "internet facing" and "internal facing" sides of your network.
So if you're connected to the Internet over your ethernet port, you can share your connection to WiFi clients. What you can't do is connect and share over the same port.
