I just recently upgraded my Mac and it's having some issues. It freezes for a few seconds, and when it resumes operation, things just go crazy. Among other problems, some text is missing, some text is not showing up in the contextual menu.
I thought it might be a font problem or something, so I went to Font Book, tried to validate all the fonts there, and all seems fine.

You should try adjusting font smoothing globally. Open up terminal and type:
defaults -currentHost read -globalDomain AppleFontSmoothing
Depending if it's enabled or not you might get a message such as:
The domain/default pair of (kCFPreferencesAnyApplication,
AppleFontSmoothing) does not exist
(which is actually good, since it tells us it's not set, and why you have the issue).
Next, type:
defaults -currentHost write -globalDomain AppleFontSmoothing -int 2
If it doesn't look any different, worse, etc. or want to adjust it even more replace the number '2' with '1'.
To remove the global setting you can use:
defaults -currentHost delete -globalDomain AppleFontSmoothing

First, you said you are on 10.7. Have you run the updaters to update your system to 10.7.3, with all of Apple's updates and patches?
Most likely you are dealing with duplicate fonts that are incompatible--old ones from your old system and newer versions of the fonts with the same names that came with 10.7.
Here are some things you can try:
If none of the above work, or if you learn from Font Book that the basic fonts that you need are corrupt, then you should re-install 10.7.3 on your existing system (this will not hurt your data) and run Software Update and apply all patches. But first you need to delete any duplicate fonts or corrupt fonts.
I believe you can download the Lion 10.7.3 installer from the Mac App Store onto your existing installation and run the re-installation procedure from there.

I'd suggest a clean install... But when you choose to do it, don't forget the backups first!
You could potentially troubleshoot it and find some corrupt file, but I'd cut the hassling and try a clean one (as it is easy to do and very likely to work).
