I want to type in dʒ on macOS but I don't know how I can type it. I tried ⌥ + keys but it seems that none of the keys is mapped to the symbol. It's not listed on this page.

Keep US Extended and use it to type your å. It's alt + k and then a.
Hold the shift key then the number corresponding. It works just fine. I think you are forgetting to let go of the shift before hitting the number. Hence the unexpected output.
Hold shift+U then, after popup let go of the shift key and hit the corresponding number.

With ABC (formerly US) Extended, ʒ is made by typing option-shift ; and then z.
