I have VLC & Elmedia players. I want to use Elmedia as a default player, but VLC is set as default for all extensions, and I can't change it.
If I choose "Always open with" for some media file, VLC still stays default for this extension.
How to fix it? macOS Catalina.
Try one of these 2 solutions I hope they'll solve your problem:
1- use "Default Apps" for change every default application.
2- From the Finder, select a MP-4 file, open the Info panel (File ➔ Get Info or ⌘I), select your preferred application and then click Change All…
I was doing it the wrong way like you try to for a long time and also have retreated to using RCDefaultApp in the past... but there's actually a way to do that natively which works.
Do the following:
1) right click your file
2) choose "Get Info"
3) in the popup find the "Open with" strip (this is by default closed) and open it
4) from the drop down choose the program you want to open that type of file
5) click "Change all..."
And that's the correct way to do it

Right-click (Control click) on the type of file you want to always open with Elmedia. Click 'Get Info'.
In the 'Open With' section, select Elmedia from the drop-down menu. To apply this change to all files of this type, click the 'Change All' button. Repeat with any other file types as desired/when they come up
