I have a question about using my Mac.
When I'm connected with others in FaceTime and I turn the FaceTime volume off, then I play a video, the volume is also off.
I want the FaceTime volume off but video volume on.
Have any idea how to separate them with the volume control?
FaceTime is stored in /Applications/Facetime.app and all the settings and preferences you need are available from within the application's preferences and help menu.

Also, since you have a new mac, you should have 90 days of paid support to get you up and running. That support is really helpful for getting oriented since it's hard to expect a new user to know where to look for details on new hardware and potentially new software.
You can control which applications automatically open after attaching a camera to your Mac using the native Mac application, Image Capture. Try plugging in you camera and then launching Image Capture. If the camera is recognized by the app, there will be a drop down menu visible in the bottom left-hand corner of the app. Click the drop down menu to choose which application to automatically open when the camera is attached (in your case, choose "No Application").
If for some reason Image Capture does not recognize your camera, the drop down menu will not be visible. In that case, I'm not sure how to fix your problem.

Individual Application sound control is only really possible using a 3rd party solution, such as Rogue Amoeba's SoundSource ($35)
There's also their more comprehensive, but at double the price, Audio Hijack, but I think that would be overkill.
