Safari for OS X only offers three search engines:
- Google, Yahoo, Bing
I want to use https://startpage.com as a default search engine to search directly from the unified URL/search bar.
Is this possible?

There's a plugin for Safari called Glims that lets you add different search engines (including Wikipedia) to the search bar among other tweaks. You can read about and download it here.

Fire up Safari and check the settings for the default search engine. For me that is google and searching the way you described it for me opens safari (currently my default browser) with a google search.
The option is right there on the first settings tab. I included an image detailing where to find it (sorry for the german):

The AnySearch extension allows you to set any search engine you want.
It achieves it by listening to the
beforeSearchevent, canceling the default behaviour and checking your settings for your chosen search engine. Then it puts your query into the specified search engine and displays the results.You could, too, edit the
hostfile, redirecting form any of the default search engines to the one you want, but that wont be so neat.
