After turning on encryption with FileVault on my MacBook Air with Mountain Lion my login screen went gray. Is there a way to go back to the default one?

If you hover over the disabled option, a tooltip appears explaining that the guest account can't be activated with FileVault turned on:
This is because the new FileVault uses full-disk encryption that's decrypted by the login password of one of the users. As the guest account, by its nature, does not have a password, that would leave your computer completely unprotected. You can still create an account for guest purposes as a regular account though.

I can confirm that FileVault 2 does not disable VNC client or service. I use encryption on all Macs and VNC between them frequently (both at home and at my F500 employer).
Can you be more specific about how it is failing? Do you see "Share Screen" option in Finder? Have you tried via Finder > Go > Connect to Server? Does it time out or give an error message?

Nope, you can’t. When FileVault is enabled, the disk needs to be decrypted on every boot. As the computer can’t access files on the disk, It generates a simple login screen so that you can enter your password and decrypt the disk. This UI is hardcoded into the firmware of your computer, and can’t be changed.
