I keep discovering keyboard shortcuts that are not listed anywhere under preferences. For example, I discovered here that ⌥ ALT⌘ CmdE will eject all partitions on a disk when a partition is selected. How the heck do people find these shortcuts, and where can I find more?

Then swap the Command and Control keys. This will change everything globally for all keyboard commands system-wide.
According to this blog post, you can create a file called ~/Library/KeyBindings/DefaultKeyBinding.Dict (you might have to create the KeyBindings folder in your Library folder).
In that file, you need the following content:

"@\UF703" = "moveWordForward:";
}
(see the linked blog post for other Windows features you might want to recreate)
Not all programs that use text fields will use the default keybindings, but this will help with many programs.
