Some of the shortcut titles take up too much space and are truncated. System Preferences cannot be resized, so I cannot see the full name.

There are tooltips. Keep the mouse hovering over any of the abbreviated strings and a tooltip will show you the full text. This works in most of the OS.
Paste this into Terminal (it's all one line, not two):
mv ~/Library/Preferences/com.apple.symbolichotkeys.plist ~/Desktop/com.apple.symbolichotkeys.plist
Press 'return'.
Log out and log in to your system.
Go to System Prefs and set up your hotkeys as you want.
According to this blog post, you can create a file called ~/Library/KeyBindings/DefaultKeyBinding.Dict (you might have to create the KeyBindings folder in your Library folder).
